I've finally been feeling more like cooking. I made a chiles rellenos casserole that J likes, and for the first time I made some pico de gallo to go with it. So easy! Why didn't I do this before? I cut up some onions, added diced tomatoes, then garlic and dried cilantro. It would've been better with fresh cilantro and fewer onions, but I'm still fairly pleased with the result. I didn't put in any peppers. I might experiment with serranos sometime, but I'm afraid it'll come out too strong.
