Tofu & Veggie stir fry with brown rice
Baked pears
Mashed avocado and tomato with salt on toasted English muffin
apples
Italian faux-sausage on bun
Quesadilla with roasted veg
omelet for dinner. with feta, veg. grape toma.
English muffins with tomatoes (canned with herbs) and mozzarella ("pizza")
If I can get maybe 3 different weeks of menus, I can probably be set. A lot of the time I eat the same things, and then a cooked thing gets put in once in a while. This week my combination cooking/frozen meal was pasta alfredo (Lean Cuisine) with bell peppers (uncooked). It was easy and different. I just now roasted some bell peppers with onions, and those will keep a few days. I'm remembering that the key to this is lots of vegetables. And now fruit is free! As long as it isn't dry (see earlier comments about grapes vs raisins).
